GLUTEN FREE VEGAN BANANA BREAD

This yummy-licious banana bread is my families favorite go-to snack and has received hall of fame bragging rights from our ravenous teen and his friends. It is quick and easy to put together and free of soya, dairy, gluten and refined sugars.

My gluten free flour blend consists of mixing the heavier brown rice and almond flour along with the lighter starchy arrowroot powder, tapioca starch and using flaxseed meal to hold it together. The coconut sugar provides a slight caramelized flavor and a lovely deep brown color to the bread. The coconut oil makes the bread super moist, light in texture with a slight coconut taste. The subtle blend of warming chai spice gives it a wonderful aroma without being overpowering. Don’t forget to use very ripe bananas for an intense banana flavor.

Steps:

So lets get started. Mash the bananas with the wet ingredients

Mix in the dry ingredients in and drop in a pan and bake at 350 degrees

Ingredients
Wet:
  • 4 ripe Bananas
  • ½ cup extra virgin coconut oil (melted)
  • 2 tbsp flaxseed meal (soaked in ½ c water ~2-3 min )
  • 1 lemon, juiced
  • 1 tsp vanilla extract
Dry:
  • 1.5 cups cup Brown rice flour
  • 1 cup almond flour
  • 1 cup coconut sugar
  • ½ cup Tapioca starch flour
  • ¼ cup Arrowroot powder
  • 3 tsp baking powder
  • 2 tsp baking soda
  • 1tsp xanthum gum
  • ½ tsp sea salt
  • ⅛ tsp cinnamon powder
  • ⅛ tsp cloves powder
  • ⅛ tsp dry ginger powder
  • ⅛ tsp cardamom powder
  • ½ cup walnuts
Instructions
  1. Pre-heat the oven to 350 degrees F.
  2. Mash the bananas well. Then mix in all the wet ingredients.
  3. In a stainless mixing bowl, mix all the dry ingredients. Add to the wet and mix to combine.
  4. Fold in the walnuts. Drop the batter in a greased pan.
  5. Bake for 50 minutes. Check with a toothpick in the center. It should come out almost clean. Bake longer if needed.
  6. Serve warm, fresh from the oven. Eat as snack or also makes a yummylicious dessert or breakfast food.
